Apple Cinnamon Muffins
Ingredients:
- 2 sheets of refrigerated puff pastry
- 2 red apples
- Juice of 1/2 lemon
- About 2 ounces melted butter
- 3 tablespoons sugar
- 1 teaspoon cinnamon
- Icing sugar to present
Preparation:
Remove the puff pastry from the refrigerator 10 minutes before starting so that it hardens and does not break when using it. Preheat oven to 350 degrees. Lightly oil a mold for muffins. In a small bowl, mix the sugar with the cinnamon. Unroll the puff pastry on the vegetable paper of the container and divide each sheet into 5 thick strips. Brush the strips with melted butter and sprinkle with cinnamon. Cut the apples in half, core and cut into very thin slices. Place the slices in a bowl with a splash of lemon juice and put in the microwave one minute or so, so that they are soft and are easier to roll with the puff pastry. Place apple slices on each strip of puff pastry; cover with the other half of the puff pastry, and roll. Place in the muffin tray and bake 45 minutes. Remove from the oven and let cool on a rack. Before serving, sprinkle with icing sugar. Enjoy!!
